Taco Salad

Here is a quick and simple salad I just can’t get enough of.  If you know me, then you should know tacos somehow find their way onto my table.  I have seen this idea many times before and recently being on a health craze, I though why not.  This salad satisfies any taco cravings and comes without any unwanted guilt (not as much at least).  This salad works great as a shared appetizer, lunch or dinner.


I used a lean grass fed ground beef – about 1 lb of it.  You can use regular ground beef (if you’re trying to keep it healthy – use lean ground beef).  I personally really enjoy the taste of grass fed beef – its quite different from regular grain fed beef.  It is much healthier and has more health benefits than regular grain fed.  The only downfall is that it is a lot more expensive.  Definitely something I treat myself to from time to time though (if the pay cheque allows).

DSC03161Cook the beef with half a medium red onion, chopped and half a jalapeno finely chopped.  I seasoned it with cumin, chili powder, cayenne, paprika, ground coriander seeds, salt and pepper.  You could use a pre-made taco seasoning but why use a taco seasoning package when you can make your own, right? – at least you can read everything you put into it.

DSC03167Top the beef mixture on top of baby spinach (you can use your favorite salad green – I happen to really like spinach).  I also threw in some cherry tomatoes, avocados and strips of tortilla (to stay true to the taco idea).  Throw on some plain Greek yogurt (I tend infuse the Greek yogurt with a little bit of light mayo, garlic, and lemon juice for a creamy sauce). Top with a little cilantro.  Enjoy!


1 lb lean grass fed beef

Baby spinach


Cherry tomatoes

tortilla cut into strips

Greek Yogurt (optional: add a little light mayo, garlic, lemon juice)

Ground Cumin

Ground corriander


Chili powder


1/2 Medium Red onion

1/2 Jalapeno


1. Chop red onion, and jalapeno.

2. Cook beef with onion, jalapeno, cumin, chili powder, paprika, ground corriander

3. Put beef mixture on top of baby spinach (or favorite salad green).

4. Top with avocado, tomatoes, tortilla strips, cilantro and Greek yogurt
